Nix: NumWorkspaces, removed nulls, default HyrplandIPC (#54)

Browse source 
No option for NumWorkspaces and some options could be null while they
shouldn't. Also set UseHyprlandIPC to true by default as that is now
required by Hyprland 0.30.
